The Basque burnt cheesecake — deeply caramelised on top, soft and creamy in the middle.
Baked hot and fast so the top caramelises while the centre stays just set. There is no base and no wheat flour in this recipe — corn starch does the work — so it is naturally suitable for a gluten-free diet. Sold by the slice or as a whole cake.
